June 2011

So we already into June, almost done! But I wanted to share a couple History dates to study, and an awesome recipe for an awesome, nutritious dessert!

Jun 29, 1956 On June 29, 1956, President Eisenhower scrawled his signature across legislation creating the largest engineering project in American history. The creation of the interstate highway system nourished Americans' love for the car and forever changed the country's economy. The arteries now quickly pump people and money from region to region and state to state.

DUTCH OVEN BLACK RICE PUDDING

2 c black rice 6 cups water
2 TBS cinnamon 1 tsp nutmeg
1 tsp ginger
cook medium on stove in dutch oven or covered pan until soft and water is gone

add
6 cans coconut milk 1 bag coconut
cinnamon to taste
1 cup sweetener: honey, Agave, Stevia, brown sugar or sugar work
can adjust o taste
cook on medium/low until done milk is all absorbed
